I was planning on doing that just for the initial break in after that I was gonna do everything else myself. I changed my oil at 300 and am about to do it again at 600. New oil never hurts, especially while it's breaking in. That’s just a waste. Definitely change your own.You probably don't want to be in 6th gear until over 55mph its a semi useless gear. Also i don't see how break in would change your bikes rpms. After 80 miles the bikes computer should have fuel and such adjusted enough where break in would no longer have any affect on rpms. Also no there is no tach on these bikes.

I personally would break it in using this method while it's bone stock. Then if you do the mods your talking about, bolt them on and immediately have it dyno tuned.
