Decide what is more important to you: the ability to safely poke your opponent outside of their range, or higher critical damage.Raw weapons (like fire and deep weapons) just raise the base damage but don't give you damage bonus depending on your stats anymore (the scaling). Other infusions change on which stats and how much damage bonus you get. Also, no need to buy a new estoc, you can re-infuse a weapon you infused.

It's going to depend mostly on how which moveset you like best. Estoc has best range and highest base damage. Rapier is short, but has the best crit damage and is the lightest. Ricard's Rapier has better scaling in dark, chaos, and blessed infusions. Main hand- sharp/chaos/dark estoc. Off hand- sharp rapier for parries.
