Definitely seconding the Uchigatana. Its speed means you can get hits in even in very narrow openings, and being able to exploit even very slight mistakes rather than having to wait for the optimal time to strike WILL make you deal more damage in the long run, even disregarding counter damage.

Also keep your fire longsword. It is useful against certain enemies (cathedral of the deep) that are vulnerable to fire.50% more effective strength and 5% additional damage on top of that. When you two hand weapons, you get 1.5 times effect in your strength stat. So if you have 20 strength, two handing a weapon gives you a effective 30 strength. Also, moveset. movesets change when one handing or two handing.
It is easy to get bleed resist, and bleed is the main reason to use uchigatana. Without landing bleed, the damage in general is pitiful. Having a lot of low damage hits is fine, if you can get them in. A scythe though gives you the ability to dish damage out over a larger range, even if the player uses a shield.

But since it is a DEX weapon I would recommend sharp infusion and leveling up DEX. It depends on your stats.
