If the coolant temp guage is bouncing all over the place, that says electrical issue to me. If it did it before and after the repair, that makes me think engine temp sensor, wiring or guage in the dash. A good mechanic should be able to diagnose that easily.

I had my thermostat changed when the AC OFF message came on and no problem since. A battery reset will have it come back on soon.
